PANCAKES WITH OATMEAL
What you need:
oat flour 400 grams (if there is no oat flour, grind oat flakes with a blender).
egg yolk 6 pieces
egg white 4 pieces
sugar 2 teaspoons
butter 2 tablespoons
milk 2 cups
fresh yeast 10 grams
salt to taste
Sift the flour, heat the milk to 35-37 °C.
Yeast dilute in a small amount of milk, let stand for 10 minutes.
Mix the flour with the remaining milk, add yeast, put in a warm place and let rise for 30 minutes. Add the yolks, mashed with sugar and salt, melted butter.
Stir the mixture again.
Add whipped into a lush foam proteins, gently and quickly mixing them with a wooden spatula dough.
Bake in a pan, lubricating it with oil, keeping in mind the greater fragility of oat pancakes compared to wheat (use a wide blade for turning). Bon appetit!
